Using honey in your meals can get the family "buzzing" around the kitchen table. Below are some recipes that incorporate honey.  We hope you enjoy!

Honey Glazed Carrots

Ingredients

  • Salt
  • 1 pound cleaned baby carrots or carrot slices
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Freshly ground black pepper
  • 1/4 cup chopped flat-leaf parsley

Directions
In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender, 5 to 6 minutes. Drain the carrots and add back to pan with butter, honey and lemon juice. Cook until a glaze coats the carrots, 5 minutes. Season with salt and pepper and garnish
with parsley.



Simple Honey Crunch Pecan Pie

Ingredients

- 9 inch pie shell, unbaked
Filling: 
- 4 eggs, beaten until smooth
 
- 1 cup dark or light corn syrup

- 1/4 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 tablespoons butter or margarine, melted
- 1 teaspoon vanilla
- 1/2 teaspoon salt
Topping:
- 1/3 cup firmly packed brown sugar
- 3 tablespoons butter or margarine
- 3 tablespoons honey
- 1 cup pecan halves

Directions
Pre-heat oven to 350 degrees F. For filling: combine eggs, corn syrup, all sugars, melted butter, vanilla and salt in a large bowl. Mix well and then spoon into unbaked pie crust.  Bake at 350 degrees F for 35 minutes. For topping: combine brown sugar, butter and honey in a medium saucepan. Cook for 2 minutes on medium heat so that brown sugar dissolves. Add pecan halves and stir until coated. Spoon pecan mixture evenly over pie. Place pie bake in the oven for 10 more minutes or until topping is bubbling and crust is golden brown (internal temperature of pie should be 200 degrees F). Take out of oven and cool to room temperature before serving.  Refrigerate leftovers...if there are any.


Old-Fashioned Honey Wheat Bread 

Ingredients

(Make 2 Loaves)
- 1 1/2 cups of water 
- 1 cup creamed cottage cheese
- 1/2 cup honey
- 1/4 cup butter or margarine
- 5 1/2 to 6 cups all-purpose or unbleached flour 
- 1 cup whole wheat flour 
- 2 tablespoons sugar
- 3 teaspoons salt
- 2 packages active dry yeast 
- 1 egg

Directions
In a medium saucepan heat water, cottage cheese, honey and butter until it is warm (around 120 degrees F).  In a large bowl blend this warm liquid, 2 cups all-purpose flour, 1 cup whole wheat flour, sugar, salt, yeast and egg at low speed until moistened.  Beat 2 minutes at medium speed.  By hand, stir in remaining flour to form a stiff dough.  Knead on floured surface until smooth and elastic, about 2 minutes.  Place dough in a greased bowl: turned greased-side-up. Cover, let dough rise in warm place until it is light and doubled in size, 45 to 60 minutes.  Grease (not oil) two 9x5" or 8x4" loaf pans. Punch down dough; divide and shape into 2 loaves. Place in prepared pans. Cover pans and let dough rise in a warm place until it is light and doubled in size, 45 to 60 minutes. Pre-heat oven to 350 degrees F.  Bake 40 to 50 minutes or until deep golden brown and loaves sound hollow when lightly tapped.  Immediately remove from pans and then let the loaves cool on a wire rack.  If desired, brush loaves with melted margarine, butter or honey butter (see recipe below).

   


Whipped Honey Butter

Ingredients

(Makes 1 cup)
- 1/2 cup butter or margarine 
- 1/4 cup honey

Directions
In a small bowl, cream 1/2 cup of butter or margarine until soft.  Slowly beat in 1/4 cup of honey. Then beat on high speed until light.
